Lemon and Cinnamon Pancakes

What better way to start the day than with a delicious, healthy and filling breakfast?

Serves: 12

Ingredients

  • 6oz cream cheese, softened
  • 6 eggs, whole
  • 2 Tsp psyllium husk, whole
  • 1Tsp cinnamon, ground
  • 3 Tbsp erythritol
  • 2 Tbsp lemon zest

Place all ingredients in a blender and blend till combined. Let the batter sit for 5 minutes and then cook like normal pancakes. I like to top mine with Walden Farms sugar-free pancake syrup.

Citron & Kanel Pannkakor

Ingredienser

  • 6 oz mjukost, mjukt
  • 6 ägg, hel
  • 2 tsk psylliumfröskal, helt
  • 1tsp kanel, malda
  • 3 msk erythritol
  • 2 msk citronskal

Lägg alla ingredienser i en mixer och blanda tills kombineras. Låt smeten stå i 5 minuter och sedan koka som normala pannkakor. Jag gillar till toppen gruvan med Walden Farms sockerfri pannkaka sockerlag.

Ingredients
Crust

  • 1.5c. almond flour
  • 1/4c. and 4tbsp butter, unsalted
  • 1/4c. sweetener (erythritol)
  • 1 tsp vanilla, extract
  • 1 tsp salt

Lemon layer

  • 2 large whole eggs
  • 2 large yolks
  • 1c. sweetener (erythritol)
  • 2 tbsp almond flour
  • Juice of 2 medium lemons (you can add more if you’d like it more lemony)
  • Zest of 2 medium lemons

Mix together all ingredients for the crust, press using FORCE into an 8′ by 8′ pan. With a fork, make holes all over the crust. Bake in preheated to 350F oven till lightly golden brown (10 minutes at 350F and 12min at 325F). Mix all lemon layer ingredients together and pour onto hot crust. Bake for 10 minutes at 350F and 15min at 325F. Let cool completely. Cut and serve. (Tastes incredible with whipped cream).

Ingredienser
Crust

  •      1.5c. mandelmjöl
  •      1/4c. och 4tbsp smör, osaltat
  •      1/4c. sötningsmedel (erythritol)
  •      1 tsk vanilj, extrakt
  •      1 tsk salt

Citron skiktet

  •      2 stora hela ägg
  •      2 stora äggulor
  •      1c. sötningsmedel (erythritol)
  •      2 msk mandelmjöl
  •      Saft av 2 medelstora citroner (du kan lägga till fler om du vill ha det mer citrus)
  •      Citronskal av 2 medelstora citroner

Blanda ihop alla ingredienserna till skorpan, trycker med våld in i en 8 “med 8” pan. Med en gaffel, göra hål över hela jordskorpan. Grädda i förvärmd till 350F ugnen tills lätt gyllenbrun (10 minuter vid 350F och 12min på 325F). Blanda alla citron lager ingredienserna och häll på varmt skorpa. Grädda i 10 minuter vid 350F och 15 min på 325F. Låt svalna helt. Klipp och servera. (Smakar otroligt med vispad grädde).

Shakshuka (Gluten-free, Low-Carb, Whole30, Paleo)

Shakshuka is a popular mid-Eastern dish traditionally served with bread. It is a dish of poached eggs in spicy, tomato sauce. The eggs pair perfectly with that hot, seasoned tomato sauce. Not only is the breakfast dish lowcarb, it is also paleo and whole30 approved.

Ingredients

  • 1 Onion, chopped
  • 2 Cloves garlic, chopped
  • 1 Bell pepper, chopped
  • 1Tbsp cumin
  • 1Tbsp chili flakes
  • Cracked pepper, to taste
  • Salt
  • 3/4 cup Tomato sauce, sugar-free
  • 1/4 cup Cherry tomatoes, chopped
  • 3-4 Eggs
  • 1/4 cup Coriander, fresh & chopped
  • 1Tsp Ghee/butter (if not paleo)

Directions

In a deep pan, add the ghee and let it melt. Add the onion and garlic to the pan on medium heat and let cook till fragrant. Then add the bell pepper and the tomatoes, let cook till soft (see Instagram video if you’re unsure). Season with cumin, chili flakes, salt and cracked pepper. Add the tomato sauce and let reduce till thick. Add the eggs on top of the sauce and let cook. (The whites will start to bubble). Once almost cooked, cover the pan for a couple of minutes until the rest of the whites are cooked. Remove from heat and add the coriander on top. Enjoy! If you are not whole30/paleo, serve with cheese chips!
